It's fun to watch him run, jump and climb over and over (and over... and over...). Of course, this mom got eaten by her fair share of mosquitoes, and he got his first skinned knee, but I'd count it as a successful afternoon.
We got back to the house around six. I had enough sense yesterday morning to pull out some turkey meat from the freezer, but didn't figure out what I'd make with it! Ugh. It was too late to go to the store, so once again, I was going to make it up as I went along. Here's what I came up with:
Supermom's Parmesan Turkey Burgers
Ingredients:
- 1 lb ground lean turkey
- 1/4 cup breadcrumbs
- 1-2 cloves of garlic
- 1 egg
- 1/4 cup Parmesan cheese (I used shredded, but then added in a teaspoon or two of grated as well.)
Mix all of the ingredients together, then roll them into patties.
Now, because I was short on time (and propane), I made these on the stove top. They didn't get as "burger-y" as I wanted them to, but it worked. I would highly suggest if you had the time or the means, grill the burgers instead of pan frying them!

Pan fry: heat your pan on the stove, then cook each side for 5-8 minutes, or until the pink is gone.
Grill: heat your grill, then cook the patties for about 20 minutes.
Because I'm TRYING to watch my carbs, I went bun-less. However, I recommend serving it on a nice roll, with all the fixins. Mmmmmm....
I threw some corn on the cob on to boil, and made a side of macaroni and cheese spirals. Dinner in a pinch, in under 40 minutes. WHEW!
